Toss together Spinach, Cabbage Blend, Red onion and ½ cup of Vinaigrette in a large salad bowl. Divide salad into 4 portions and top with dressed Avocado Slices, Grapefruit segments and finish with freshly ground black pepper.
Whisk together all ingredients other than oil. Season well with Salt and Pepper. In a slow steady stream, whisk in oil to form a temporary emulsion and thicken vinaigrette. As it sits it will separate, so be sure to adjust seasoning if necessary and whisk thoroughly before assembling salad.
