Cabbage and Spinach Slaw with Sliced Avocado and Grapefruit Vinaigrette

Ingredients

Procedure:

Toss together Spinach, Cabbage Blend, Red onion and ½ cup of Vinaigrette in a large salad bowl.  Divide salad into 4 portions and top with dressed Avocado Slices, Grapefruit segments and finish with freshly ground black pepper.

Vinaigrette

  • ½ cup Grapefruit Juice, Fresh (May substitute Refrigerated)
  • ¼ cup White Wine Vinegar
  • 2 tsp.  minced Grapefruit Zest
  • 1 ½ cup Light Sesame oil or Peanut oil
  • Kosher Salt and Freshly Ground Black Pepper (to taste)

Procedure:

Whisk together all ingredients other than oil. Season well with Salt and Pepper.  In a slow steady stream, whisk in oil to form a temporary emulsion and thicken vinaigrette.  As it sits it will separate, so be sure to adjust seasoning if necessary and whisk thoroughly before assembling salad.
