California Avocado Mandarin Salad

Ingredients

  • 1 bag Ready Pac Foods® European-Style Salad, any variety
  • 1 (15-oz) can mandarin oranges, well drained
  • 1 (6-oz) pkg cooked and sliced chicken breast
  • 1/4 cup pecans, toasted
  • 1/2 cup light Italian or balsamic vinaigrette dressing
  • 2 ripe California avocados, seeded, peeled and cut into cubes

Procedure

In a large salad bowl, combine the first 5 ingredients. In small bowl, combine dressing and 1/2 the avocado cubes. Mash and blend into dressing. Add remaining avocado cubes and dressing to salad. Toss and serve.
