Chilled Hotzy Totzy Melon Salad

Ingredients

  • 1 cup rice wine vinegar
  • 1/3 cup granulated sugar
  • 1/3 cup water
  • 1/2 tsp. crushed red pepper flakes
  • 1 (24-oz.)pkg Fresh Cut Cantaloupe or Honeydew
  • 1 English cucumber, peeled and sliced
  • 1 pkg Ready Pac Foods® Diced Red Onions
  • 1 cup chopped fresh cilantro, optional

Procedure

In large bowl, stir vinegar, sugar, water and red pepper flakes. Add remaining ingredients. Cover; chill for several hours before serving. For best taste, salad should be icy cold.
