Ingredients

  • 1 (9-inch) refrigerated pie crust, prepare according to the package for a single crust
  • 3/4 cup Diced Peppers (or your favorite veggies)
  • 1/2 cup fresh, pre-washed broccoli florets (or your favorite veggies)
  • 1/4 cup Ready Pac Foods® No Tears® Diced Onions
  • 1 cup shredded Pepper Jack cheese or sharp cheddar cheese
  • 4 large eggs, beaten
  • 1-1/2 cups whole milk or half-and-half
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/8 tsp cayenne pepper
  • 2 cups Ready Pac® Baby Spinach (or your favorite veggies)

Procedure

Preheat oven to 350 degrees. Bake piecrust for 7 minutes. Evenly layer the bottom of the crust with Ready Pac® No Tears® Onions, Ready Pac® Baby Spinach, Diced Peppers, Broccoli (or your favorite veggies) and Pepper Jack cheese. In a medium bowl, lightly beat eggs; whisk in remaining ingredients. Pour egg mixture over vegetables and cheese. Bake 30-40 minutes or until knife inserted 1-inch from edge comes out clean.
