Preheat oven to 375 degrees. In bowl, combine ground beef, 1 cup Ready Pac Foods® Pico de Gallo and remaining ingredients; mix until well blended. Spoon meat mixture into an ungreased 9x5x3-inch loaf pan; pat to form loaf. Bake 45 minutes to 1 hour or until internal temperature measures 165 degrees; drain liquid half way through baking. Remove from oven and let stand 10 minutes before slicing. Spoon remaining Ready Pac Foods® Pico de Gallo over each serving.
