Roasted Hearts of Romaine with Spring Mix, Croutons and Warm Brie Dressing



Place brie in a small oven safe baking disk at 200F to soften.  While brie softens, in a small sauce pan, warm olive oil over medium heat. Add onions and sauté until translucent.  Mix in Dijon mustard, and remove from heat to whisk in sherry vinegar.  Return to heat and add warmed Brie. Whisk until a uniform, creamy dressing forms. Remove from heat and season with salt and pepper to taste. (If using bacon, consider the saltiness it will bring when seasoning the dressing). Hold warm.  Toss Ready Pac Foods® Bella Romaine with 1 T of olive oil and salt and pepper to taste. Place in a 400F oven until wilted and slightly browned.  Remove from oven and allow roasted lettuce to cool.  Place roasted Romaine on  platter and top with Spring Mix, butter croutons and/or crumbled cooked bacon. Drizzle with warm brie Dressing.  Serve Immediately.

Butter Croutons: Dice stale or day old bread – crust removed- to desired size, @3/4 cubes.  Melt butter in a sauté pan and add bread cubes.  Toss over medium heat until toasted and golden brown.  Remove from pan and reserve for service.
