Spinach Stuffed Shells


  • 1 bag Ready Pac Foods® Microwave Spinach, microwave according to package directions
  • 1/3 cup Ready Pac Foods® Diced Onions, (7-oz) pkg
  • 3/4 cup low fat ricotta cheese
  • 1/2 cup shredded Parmesan or Asiago cheese
  • 2 eggs, beaten
  • 1/8 tsp ground nutmeg
  • 1 (12-oz.)box jumbo shells, cooked according to package directions
  • 1 (28-oz.)jar your favorite pasta sauce


Preheat oven to 350 degrees. In bowl, combine Ready Pac Foods® Spinach, ricotta, 2/3 cup mozzarella cheese, Ready Pac Foods® Diced Onions, Parmesan cheese, eggs and nutmeg; blend well. Stuff the cooked shelled with filling. Pour half the pasta sauce in a greased 13x9x2-inch-baking dish. Arrange the stuffed shells in baking dish; top with remaining sauce and mozzarella cheese. Bake, uncovered, for 30 minutes.
